About us
Founded in 2019 by husband-and-wife team Alex Palumbo & Rachel Bailey Palumbo, Hey Palu is an award-winning Italian cocktail bar on Bread Street in Edinburgh's Old Town. Inspired by Alex's Italian upbringing and a shared belief that the best bars are built on warm hospitality, Hey Palu celebrates Italy's drinking culture through aperitivo, modern classic cocktails and one of the most extensive collections of amaro outside Italy.
For Alex, aperitivo is part of everyday life. It's about taking time to slow down, catching up with friends and family, and enjoying good company. Together, Alex and Rachel wanted to bring that same feeling to Edinburgh, creating an intimate neighbourhood bar where everyone feels welcome, whether you're joining us for a quick aperitivo, a perfectly balanced Negroni or an evening discovering something completely new.
Our drinks menu brings together Italy's most iconic serves, modern classic cocktails, Hey Palu originals and the largest collection of amaro outside Italy. Every drink is created with the same attention to balance, flavour and quality that has become synonymous with the bar. Alongside our cocktails, we're passionate about introducing guests to the wonderfully diverse world of amaro, with bottles sourced from across Italy, each reflecting the ingredients, traditions and regional character of where it's made.
Today, Hey Palu is proud to be recognised as a Top 50 UK Cocktail Bar, awarded a Pin by The Pinnacle Guide, featured on the World's 50 Best Discovery list and recognised by CLASS Bar Magazine, SLTN and the Scottish Bar & Pub Awards.
